Spicy Corn, Black Bean, and Red Pepper Pulled Chicken
- 1 ½ lbs (I used 2 ½ breasts) boneless skinless chicken breast
- 1 jar of Corn, Black Bean, And Red Pepper salsa from Desert Pepper Trading Company
- 1-2 tsp crushed red pepper flakes
- ¼ cup of water
Put all ingredients into a Crockpot set to high heat. Mix all the ingredients well and let it cook for about 3-4 hours. I usually pull the chicken apart at hour 3 and allow it to cook for another hour or so. Make sure to periodically check on it and stir it around, if you need to add more water for moisture do so! Don’t want dry chicken.
I love this recipe because you can leave it cook while you prep other food and then you have a delicious side or main course to combine with other meals. I like to use this chicken on tacos/burritos, on cauliflower or brown rice, or you can even make a Mexican inspired pizza! Try with your favorite jar of all natural salsa. I also made it with Newman’s Pineapple salsa and it tastes amazing!

This was the best cauliflower pizza I ever made! I know my followers on Instagram have been waiting for me to post this and I am so sorry that it took me so long to get it up. Here is the recipe for the crust:
- 2 tablespoons of coconut flour
- 1 tablespoon of almond meal/flour
- 1/2 tsp of black pepper, crushed red pepper flakes, italian seasoning mix
- 1/4 tsp of garlic powder
- 2 1/2-3 cups of cauliflower, put into a food processor and “riced” (pulsed until the texture of rice)
- 1 whole large egg and 2 large egg whites
- 1 tbsp water
- 2 cloves of garlic minced
How to form the crust:
First, preheat your oven to 375 degrees
Combine all the ingredients in a bowl and mix very well. Need to make sure there are no huge lumps of coconut flour inside of the mixture. Form the mix into a ball the best you can. Using a sheet of parchment paper on a baking pan, place the ball onto the baking sheet. Flatten out the “dough” to be about an inch in thickness. You can make it more thin, but then you may not be able to eat it with your hands. Go around the edge and press in making a bit of a dip so it looks more like a real crust. Place the crust into the oven and bake for 15-20 minutes. Remove from oven and put on all your ingredients and return to the oven for 10 minutes or so. I personally used 1/4 cup of organic tomato sauce, 2 cloves fresh garlic chopped up finely, extra lean ground turkey that I had already made, scallions (green onions), crushed red pepper flakes, and reduced fat mozzarella cheese.
You can make so many amazing pizzas with this recipe that are guilt-free and low carb!
